Steps

Prepare the Dough

Add 500 g of flour t55, 10 g of salt, 40 g of granulated sugar, 20 g of fresh baker's yeast in the food processor bowl.
Mix manual: 5sec / 0°C / Speed 3.
Add 250 g of milk, 100 g of egg in the food processor bowl.
Mix manual: 20sec / 0°C / Speed 3.
Add 150 g of butter in the food processor bowl.
Mix knead: 6:00min / 0°C / Speed 1.
Transfer the content of the food processor bowl in a mixing bowl cover with towel.
Setaside the dough during 1h .

Assemble the Sausage Brioche

Preheat the oven at 180°C.
Deflate the risen dough.
Roll it out on a lightly floured surface into a large rectangle, about 30×40 cm.
Sprinkle 50 g of shelled pistachio over the dough.
Place 1 morteau sausage in the dough.
Fold the dough over the sausage, sealing the edges tightly to enclose the sausage completely.
Transfer the content of the dough on a baking tray.
Add 1 egg in a bowl.
Whisk the Egg for the egg wash.
Brush 1 egg on the dough.

Bake the Sausage Brioche

Cook in the oven at 180°C.
Bake until golden brown and cooked through.
Let cool slightly before slicing and serving.
Serve Warm.
