  • 200 g Zucchini
  • 200 g Ricotta
  • 2 Eggs
  • 50 g Flour t55
  • 50 g Grated parmesan cheese
  • 20 g Fresh dill
  • 1 g Pepper
  • 1 g Salt
  • 50 g Cooked peeled shrimp
  • 50 g Mayonnaise
  • 10 g Lemon juice
  • 5 g Tabasco

Steps

Zucchini Waffle Batter

  1. Add 200 g of zucchini in the food processor bowl.
  2. Mix chop: 5sec / 0°C / Speed 5.
  3. Add 200 g of ricotta, 2 eggs, 50 g of flour t55, 50 g of grated parmesan cheese, 10 g of fresh dill, 1 g of pepper adjust according to the tastes, 1 g of salt adjust according to the tastes in the food processor bowl.
  4. Mix manual: 20sec / 0°C / Speed 4.

Cooking the Waffles

  1. Preheat the waffle maker.
  2. Transfer the content of the food processor bowl on a waffle iron.
  3. Cook in the waffle maker.
  4. Transfer the content of the waffle iron on a plate.

Smoked Salmon Filling

  1. Rinse the food processor bowl.
  2. Add 50 g of cooked peeled shrimp, 50 g of mayonnaise, 10 g of fresh dill, 10 g of lemon juice, 5 g of tabasco in the food processor bowl.
  3. Mix manual: 10sec / 0°C / Speed 4.

Assembling

  1. Line two cylindrical molds with Smoked Salmon slices, ensuring they overlap slightly and extend over the edge of the mold.
  2. Spoon the Smoked Salmon Filling mixture into the Smoked Salmon-lined molds, pressing gently to fill evenly.
  3. Fold the overhanging Smoked Salmon slices over the filling to enclose it completely.
  4. Carefully unmold each timbale onto a plate.
  5. Cut one timbale in half to reveal the zucchini filling.
  6. Arrange the Waffles on the plate next to the timbales.
  7. Serve Immediately.
