- 1 g Greengage
- 1 g Granulated sugar
- 15 g Lemon juice
Steps
Fruit Prep
- Wash the greengages.
- Pit the greengages.
- Add 1 g of greengage in a bowl.
Cooking
- Add 1 g of granulated sugar, 15 g of lemon juice in the food processor bowl.
- Mix manual: 20:00min / 100°C / Speed 1.
- Remove the lid to allow steam to escape.
- Check the setting point by placing a spoonful of jam on a cold plate; it should wrinkle when pushed. If not, cook for a further 5 minutes and retest.
Finishing
- Pour the content of the food processor bowl in an airtight jar.
- Seal the jars immediately and let cool.
