Ingredients
- 200 g Flour
- 100 g Butter
- 50 g Icing sugar
- 1 Egg
- 1 Pinch(es) Salt
- 2 Tablespoon(s) Water
- 200 g Dark chocolate
- 150 g Fresh liquid cream
- 1 Tablespoon(s) Butter
- 300 g Red fruit
- 1 Tablespoon(s) Icing sugar
Steps
- Preheat the oven at 180°C.
- Add 200 g of flour in the food processor bowl.
- Cut into dices, and add 100 g of butter in the food processor bowl.
- Add 50 g of icing sugar, 1 egg, 1 pinch(es) of salt in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 5. The mixture should be homogeneous, if it is not the case scrape the edges of the bowl with the spatula and mix again
- Add 2 tablespoon(s) of water in the food processor bowl.
- Mix knead: 20sec / 0°C / Speed 4.
- Roll out the dough on a lightly floured surface and cut it into circles for the tartlets.
- Place them in pre-greased tartlet molds.
- Cook in the oven during 10min to 12min.
- Let it cool down.
- In the meantime, prepare the chocolate ganache.
- Cut in pieces, and add 200 g of dark chocolate in the food processor bowl.
- Add 150 g of fresh liquid cream, 1 tablespoon(s) of butter in the food processor bowl.
- Mix manual: 5:00min / 50°C / Speed 2.
- Pour the ganache over the cooled tartlet bases and place them in the refrigerator for about 1 hour, until the ganache is set.
- Add 300 g of red fruit in a mixing bowl.
- Add 1 tablespoon(s) of icing sugar in the mixing bowl.
- Mixing; combining different elements together.
- Before serving, top the tartlets with red fruits and enjoy them immediately.
