  • 15 g Fresh baker's yeast
  • 160 g Milk
  • 30 g Granulated sugar
  • 60 g Butter
  • 30 g Pearl sugar

Steps

Dough

  1. Add 300 g of flour t55, 15 g of fresh baker's yeast, 150 g of milk, 30 g of granulated sugar, 60 g of butter in the food processor bowl.
  2. Mix knead: 2:00min / 0°C / Speed 1.
  3. Transfer the content of the food processor bowl in a mixing bowl.
  4. Form a ball.
  5. Setaside the dough cover with towel during 1h .

Shaping and Baking

  1. Preheat the oven at 180°C.
  2. Deflate the dough gently.
  3. Roll the dough into a large oval shape on a lightly floured surface.
  4. Transfer the content of the workplan on a baking tray to be covered in baking paper before.
  5. Make deep incisions on the top of the oval, extending from the edge towards the center, creating lobes using a sharp knife or a dough scraper.
  6. Brush 10 g of milk on the dough.
