- 1 g Pepper
- 1200 g Chicken thigh
- 150 g Onion
- 10 g Clove of garlic
- 20 g Olive oil
- 330 g Brown beer
- 200 g Chicken broth
- 50 g Tomato puree
- 2 g Thyme
Steps
Chicken
- Cut the Chicken Thighs into bite-sized pieces.
- Add 20 g of flour t55 in a bowl.
- Add 2 g of salt, 1 g of pepper in the bowl.
- Mix the flour, salt, and pepper in a bowl.
- Add 600 g of chicken thigh in the bowl.
- Toss to coat evenly.
Aromatics
- Peel and quarter the Onions.
- Peel the Garlic cloves.
- Add 150 g of onion, 10 g of clove of garlic in the food processor bowl.
- Mix chop: 5sec / 0°C / Speed 5. Scrape the sides of the bowl with the spatula
Beer Chicken
- Add 20 g of olive oil in the food processor bowl.
- Mix manual: 5:00min / 120°C / Speed 1.
- Add 600 g of chicken thigh in the food processor bowl.
- Mix manual: 7:00min / 120°C / Speed 1.
- Add 330 g of brown beer, 200 g of chicken broth, 50 g of tomato puree, 2 g of thyme in the food processor bowl.
- Mix manual: 25:00min / 100°C / Speed 1.
- Add 1 g of salt adjust according to the tastes, 1 g of pepper adjust according to the tastes in the food processor bowl.
