Ingredients
- 280 g Olive oil
- 3 Cloves of garlic
- 15 g Lemon zest
- 4 Strand(s) Thyme
- 0.5 Teaspoon(s) Crushed chilli
- 550 g Green olive
- 50 g Lemon juice
Steps
- Using a vegetable peeler, carefully peel the zest of a lemon, avoiding the white pith, and set it aside. Cut the lemon in half and squeeze the juice from both halves into a small bowl and set aside.
- Add 280 g of olive oil, 3 cloves of garlic, 15 g of lemon zest, 4 strand(s) of thyme, ½ teaspoon(s) of crushed chilli in the food processor bowl.
- Mix manual: 4:00min / 100°C / Speed 1.
- Add 550 g of green olive in the food processor bowl.
- Mix manual: 5:00min / 90°C / Speed .
- Add 50 g of lemon juice in the food processor bowl.
- Remove the garlic cloves and discard them. Transfer the marinated olives with orange into a serving bowl and garnish with orange zest and fresh thyme.
- Serve hot or at room temperature.
