  • 30 g Butter
  • 1 Pinch(es) Salt

  • 150 g Whole milk

Steps

Carrot Puree

  1. Peel, cut in pieces, and add 500 g of carrot in the food processor bowl.
  2. Add 200 g of water in the food processor bowl.
  3. Mix manual: 20:00min / 100°C / Speed 1.
  4. Drain the content of the food processor bowl in a strainer.
  5. Transfer the content of the strainer in the food processor bowl.
  6. Add 30 g of butter, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
  7. Mix manual: 20sec / 0°C / Speed 5.

Flan Mixture

  1. Wash the food processor bowl.
  2. Preheat the oven at 180°C.
  3. Transfer the content of the preparation content in the food processor bowl.
  4. Add 3 eggs, 150 g of whole milk in the food processor bowl.
  5. Mix manual: 10sec / 0°C / Speed 3.

Baking

  1. Grease ramekins with butter.
  2. Pour the content of the food processor bowl in the ramekin.
  3. Grate, and sprinkle 80 g of gruyere on the ramekin.
  4. Place the ramequins in a baking dish. Fill the dish with hot water to create a water bath.
  5. Cook in the oven at 180°C during 30min.
  6. Bake until the flan is set and the cheese is golden brown. Let cool slightly before serving.
  7. Serve Warm.
