Ingredients
- 600 g Eggplant
- 1 Clove of garlic
- 50 g Lime juice
- 30 g Sesame cream - tahini
- 3 Tablespoon(s) Fresh parsley
- 0.25 Teaspoon(s) Mild red pepper
- 0.50 Teaspoon(s) Salt
- 2 Tablespoon(s) Pomegranate
Steps
- Wash, and add 600 g of eggplant in a salad bowl.
- Brush the eggplants with oil and grill them on the barbecue, turning them regularly with tongs, until they are tender and fully charred.
- Let cool, then slice the eggplants lengthwise and scoop out the flesh, discarding the skin.
- Transfer the flesh of the eggplants into the cooking basket and press out the excess liquid using a spatula, then set aside.
- Add 1 clove of garlic in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 5. Scrape the sides of the bowl with the spatula
- Add 50 g of lime juice, 30 g of sesame cream – tahini, 3 tablespoon(s) of fresh parsley leaves only, ¼ teaspoon(s) of mild red pepper, ½ teaspoon(s) of salt in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 4. Scrape the sides of the bowl with the spatula
- Add the reserved eggplant flesh.
- Mix manual: 4sec / 0°C / Speed 4. Scrape the sides of the bowl with the spatula
- Transfer of the food processor bowl by using the spatula in a bowl 0.
- Sprinkle 2 tablespoon(s) of pomegranate
- Serve Cold.
