  • 7 g Fresh baker's yeast
  • 300 g Flour t55
  • 75 g Granulated sugar
  • 75 g Butter
  • 4 Eggs
  • 100 g Raisin
  • 50 g Flaked almond

Steps

Dough

  1. Add 100 g of milk, 7 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 2:00min / 37°C / Speed 2.
  3. Add 300 g of flour t55, 75 g of granulated sugar, 75 g of butter, 2 eggs in the food processor bowl.
  4. Mix knead: 3:00min / 0°C / Speed 1.
  5. Add 100 g of raisin in the food processor bowl.
  6. Mix manual: 1:00min / 0°C / Speed 2 in inverse.
  7. Transfer the content of the food processor bowl in a mixing bowl.
  8. Setaside the dough in a bowl cover with towel during 1h .

Shaping and Proofing

  1. Preheat the oven at 180°C.
  2. Turn the dough out onto a lightly floured surface.
  3. Divide the dough into three equal strands.
  4. Braid the strands together to form a Langhopf.
  5. Place the content of the dough on a baking tray to be covered in baking paper before.
  6. Setaside the dough on the baking tray cover with towel during 30min.

Baking

  1. Add 1 egg in the bowl.
  2. Whisk the egg to create an egg wash.
  3. Brush 1 egg on the dough.
  4. Sprinkle 50 g of flaked almond on the dough.
  5. Cook in the oven at 180°C.
  6. Bake until golden brown.
  7. Let the Langhopf cool on a wire rack before slicing and serving.
  8. Serve Immediately.
