  • 500 g Flour t55
  • 300 g Fine semolina
  • 10 g Salt
  • 350 g Water
  • 100 g Butter

Steps

Dough Preparation

  1. Add 500 g of flour t55, 300 g of fine semolina, 10 g of salt, 350 g of water in the food processor bowl.
  2. Mix knead: 6:00min / 0°C / Speed 1.
  3. Transfer the content of the food processor bowl in a bowl cover with plastic wrap.
  4. Setaside the dough in the bowl during 30min.

Butter melting

  1. Add 100 g of butter in a saucepan.
  2. Melt the butter over low heat in the saucepan. Set aside.

Shaping and Cooking

  1. Divide the dough into 8 equal balls.
  2. Cover them with olive oil to prevent sticking.
  3. On a lightly oiled surface, stretch each dough ball into a very thin square.
  4. Brush with melted butter and fold into a square shape.
  5. Preheat the pan with an oil base.
  6. Cook each Msemen for 2-3 minutes per side, until golden brown and cooked through. You may need to add a little Olive Oil to the pan if it starts to stick.

Serving

  1. Serve Warm.
  2. Serve Msemen traditionally with butter and honey or jam.
