Embark on a flavor fiesta with Tacos al Pastor! Succulent pork loin, marinated in a vibrant blend of pineapple juice, chili spices, and aromatic herbs, is slow-cooked to tender perfection. Served on warm corn tortillas with fresh toppings, these tacos are a symphony of sweet, spicy, and savory notes that will transport you straight to the streets of Mexico.
Ingredients
- 100 g Pineapple juice
- 50 g White wine vinegar
- 30 g Chili powder
- 15 g Anise
- 10 g Garlic powder
- 5 g Dried oregano
- 5 g Ground cumin
- 5 g Thyme
- 10 g Salt
- 5 g Pepper
- 1000 g Pork loin
- 50 g Olive oil
- 12 Corn tortillas
- 100 g Red onion
- 200 g Tomato
- 50 g Fresh coriander
- 100 g Iceberg lettuce
- 200 g Tomato sauce
Steps
Pork Marinade
- Add 100 g of pineapple juice, 50 g of white wine vinegar, 30 g of chili powder, 15 g of anise, 10 g of garlic powder, 5 g of dried oregano, 5 g of ground cumin, 5 g of thyme, 10 g of salt, 5 g of pepper in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 4.
- Pour the marinade into a large bowl.
- Sliced, and add 1000 g of pork loin in a bowl.
- Cover and refrigerate for at least 4 hours, or preferably overnight.
Cooking the Pork
- Place the marinated pork in the Thermomix bowl.
- Add 50 g of olive oil in the food processor bowl.
- Mix manual: 20:00min / 120°C / Speed 1 in inverse.
- Remove the pork from the bowl.
- Shred it with two forks. Set aside.
Assembling the Tacos
- Warm the Corn Tortillas in a dry pan or microwave until pliable.
- Add 12 corn tortillas on a workplan.
- Sliced, and add 100 g of red onion on the workplan.
- Cut into dices, and add 200 g of tomato on the workplan.
- Chop, and add 50 g of fresh coriander on the workplan.
- Sliced in strips, and add 100 g of iceberg lettuce on the workplan.
- Add 200 g of tomato sauce in the bowl.
- Top with thinly sliced Red Onions, diced Tomatoes, chopped Fresh Coriander, and shredded Iceberg Lettuce.
- Serve Immediately.
- Serve immediately with Tomato Sauce on the side.
- Store leftover pork in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
