- 2 Cloves of garlic
- 20 g Olive oil
- 500 g Vegetable broth
- 2 Pinch(es) Salt
- 2 Pinch(es) Pepper
- 1 Pinch(es) Chili powder
- 1 Slice(s) Bread
Steps
Butternut Squash Base
- Peel, deseed, cut into cubes, and add 800 g of butternut squash in the food processor bowl.
- Peel, cut in four, and add 100 g of onion in the food processor bowl.
- Peel, and add 2 cloves of garlic in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 5.
- Scrape down the sides of the bowl with a spatula
- Add 20 g of olive oil in the food processor bowl.
- Mix manual: 5:00min / 120°C / Speed 1.
Cooking & Blending
- Add 500 g of vegetable broth, 2 pinch(es) of salt, 2 pinch(es) of pepper in the food processor bowl.
- Mix manual: 20:00min / 100°C / Speed 1.
- Let the temperature decrease to 60°C.
- Mix manual: 1:00min / 0°C / Speed 10. The mixture should be homogeneous, if it is not the case scrape the edges of the bowl with the spatula and mix again
Serving
- Pour the content of the food processor bowl in a bowl.
- Sprinkle 1 pinch(es) of chili powder on a preparation content.
- Serve Hot.
- Serve Warm.
