- 250 g Flour t55
- 120 g Water
- 7 g Salt
- 25 g Olive oil
- 200 g Onion
- 150 g Bacon pieces
- 200 g Fresh liquid cream
- 100 g Gruyere
- 1 g Pepper
Steps
Dough
- Add 250 g of flour t55, 120 g of water, 5 g of salt, 10 g of olive oil in the food processor bowl.
- Mix knead: 2:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl on a workplan.
- Form a ball.
- Transfer the content of the workplan in a cling film.
- Setaside the dough during 30min.
Topping
- Wash the food processor bowl.
- Cut in two, and add 200 g of onion in the food processor bowl.
- Mix chop: 5sec / 0°C / Speed 5.
- Add 15 g of olive oil in the food processor bowl.
- Mix manual: 5:00min / 120°C / Speed 1.
- Add 150 g of bacon pieces in the food processor bowl.
- Mix manual: 5:00min / 120°C / Speed 1 in inverse.
- Add 200 g of fresh liquid cream, 100 g of gruyere, 2 g of salt, 1 g of pepper in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 3.
Final Preparation
- Preheat the oven at 240°C.
- Transfer the content of the cling film on the workplan.
- Roll out the dough thinly into a rectangular shape.
- Transfer the content of the food processor bowl on the dough.
- Spread the topping evenly over the dough.
- Cook in the oven at 240°C.
- Serve Hot.
