- 150 g Water
- 10 g Granulated sugar
- 7 g Fresh baker's yeast
- 250 g Flour t55
- 5 g Salt
- 15 g Olive oil

Dough
- Add 150 g of water, 10 g of granulated sugar in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 2.
- Add 7 g of fresh baker's yeast in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 4.
- Add 250 g of flour t55, 5 g of salt in the food processor bowl.
- Mix knead: 3:00min / 0°C / Speed 1.
- Add 15 g of olive oil in the food processor bowl.
- Mix knead: 2:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl in a mixing bowl.
- Let it rise in a warm place for 1 hour, or until doubled in size.
Shaping & Baking
- Preheat the oven at 250°C.
- Place a baking sheet or baking stone inside the oven to heat up.
- Divide the dough into 6-8 equal portions.
- On a lightly floured surface, roll each portion into a thin circle, about 1/2 cm (1/4 inch) thick.
- Place 2-3 pita breads at a time (depending on the size of your baking sheet) onto the preheated baking sheet or stone.
- Cook in the oven at 250°C during 5min.
- Bake for 5-7 minutes, or until the pitas puff up and have light golden spots.
- Transfer the baked pitas to a clean kitchen towel and cover them to keep them soft.
- Repeat with the remaining dough.
Serving
- Let the pitas cool slightly before serving.
- Serve Warm.
- Serve with your favorite fillings such as falafel, hummus, vegetables, or grilled meats.
