Rocher coco, a delightful treat that transports you straight to a tropical paradise with every bite, is a charming confection that originated in the sunny climes of France. These little coconut rocks are not only a feast for the eyes but also a dance of textures – crispy on the outside and chewy on the inside, thanks to the magic of grated coconut and the fluffiness of egg whites. Legend has it that these treats were inspired by the islands of the Caribbean, where coconut trees sway in the breeze. And let’s not forget the sneaky addition of applesauce that keeps them moist and adds a touch of fruity sweetness – a true culinary twist! Perfect for a sunny afternoon or as a sweet surprise for your guests, these morsels are as much fun to make as they are to eat!
