  • 70 g Flour t55
  • 2 Eggs
  • 50 g Pearl sugar

Steps

Dough

  1. Add 125 g of water, 50 g of butter, 1 g of salt, 8 g of granulated sugar in the food processor bowl.
  2. Mix manual: 5:00min / 100°C / Speed 1.
  3. Add 70 g of flour t55 in the food processor bowl.
  4. Mix manual: 20sec / 0°C / Speed 4.
  5. Setaside the preparation content let cool during 10min.
  6. Mix manual: 30sec / 0°C / Speed 5.
  7. Add 2 eggs one by one in the food processor bowl.

Shaping and Baking

  1. Preheat the oven at 180°C.
  2. Transfer the content of the food processor bowl in a piping bag.
  3. Fit the piping bag with a plain round nozzle
  4. Line a baking sheet with baking paper
  5. Pipe small mounds of dough onto the prepared baking sheet
  6. Sprinkle 50 g of pearl sugar on some dough.
  7. Cook in the oven at 180°C during 20min.
  8. Bake until golden brown and puffed up
  9. Do not open the oven door during baking

Final Presentation

  1. Transfer the content of the baking tray in a strainer.
  2. Let cool completely
  3. Transfer the content of the strainer in a service dish.
  4. Arrange the Chouquettes in serving dishes or baskets, allowing for a varied presentation of sizes and shapes
  5. Serve Immediately.
