- 500 g Water
- 20 g Fresh baker's yeast
- 500 g Flour t55
- 10 g Salt
- 30 g Liquid honey
- 10 g Oatmeal flake
Steps
Dough
- Add 500 g of water, 20 g of fresh baker's yeast in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 2.
- Add 500 g of flour t55, 10 g of salt, 30 g of liquid honey, 50 g of oatmeal flake in the food processor bowl.
- Mix knead: 6:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl in a mixing bowl.
- Lightly oil the bowl.
- Cover with a clean kitchen towel.
- Setaside the preparation content in a bowl during 1h .
Shaping & Second Rise
- Preheat the oven at 220°C.
- Gently deflate the dough.
- Divide it in half.
- Shape each half into a loaf.
- Place the content of the preparation content on a baking tray.
- Line the baking sheet with parchment paper.
- Sprinkle 10 g of oatmeal flake on some dough.
- Cover both loaves with a clean kitchen towel.
- Setaside the dough on the baking tray during 30min.
Baking
- Cook in the oven during 30min.
- Bake until golden brown.
- Let the bread cool completely on a wire rack before slicing and serving.
- Serve Immediately.
