- 3 Eggs
- 75 g Granulated sugar
- 250 g Mascarpone
- 100 g Coffee
- 100 g Raspberry
- 100 g Blueberry
- 20 g Bitter cocoa
- 50 g Cherry
Steps
Cream Base
- Add 3 eggs only white in the food processor bowl.
- Place the whisk.
- Mix manual: 4:00min / 0°C / Speed 4.
- Transfer the content of the food processor bowl in a mixing bowl.
- Setaside the preparation content.
- Wash the food processor bowl.
- Add 3 eggs only the yellow, 75 g of granulated sugar in the food processor bowl.
- Mix manual: 3:00min / 0°C / Speed 3.
- Add 250 g of mascarpone in the food processor bowl.
- Mix manual: 1:00min / 0°C / Speed 3.
- Transfer the content of the food processor bowl in the mixing bowl.
- Gently fold in the whipped egg whites using a spatula.
Assembly
- Add 100 g of coffee in a coffee maker.
- Brew the coffee and let it cool.
- Dip the Spoon Biscuits in the Coffee and arrange them in the bottom of a serving dish.
- Pour half the content of the preparation content.
- Distribute 50 g of raspberry, 50 g of blueberry over the preparation content.
- Repeat layers with remaining Spoon Biscuits, cream, Raspberries and Blueberries.
Decoration
- Sprinkle 20 g of bitter cocoa on the preparation content.
- Add 50 g of cherry, 50 g of raspberry, 50 g of blueberry over the preparation content.
- Setaside the preparation content in a fridge during 4h .
- Serve Cold.
