Ingredients
- 130 g Water
- 15 g Granulated sugar
- 7 g Dehydrated baker's yeast
- 250 g Flour t55
- 5 g Salt
- 15 g Butter
- 8 Wieners
- 1 Egg
- 5 g Coarse salt
- 5 g White sesame seed
Steps
Dough
- Add 120 g of water, 15 g of granulated sugar, 7 g of dehydrated baker's yeast in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 2.
- Add 250 g of flour t55, 5 g of salt, 15 g of butter in the food processor bowl.
- Mix knead: 3:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl in a bowl.
- Setaside the dough in the bowl cover with plastic wrap during 1h 30.
Shaping the Pretzel Dogs
- Preheat the oven at 200°C.
- Line a baking sheet with baking paper.
- Divide the dough into 8 equal pieces.
- Roll each piece of dough into a long, thin strand, approximately 30 cm long.
- Wrap a strand of dough around each wiener, leaving the ends of the wiener exposed.
- Add 8 wieners around the dough.
- Beat Eggs with Water in a bowl.
- Add 1 egg with a plate.
- Add 10 g of water with the plate.
- Brush the dough with the egg wash.
- Sprinkle 5 g of coarse salt, 5 g of white sesame seed on the dough.
- Place the pretzel dogs on the prepared baking sheet.
Baking
- Cook on the oven at 200°C during 15min.
- Cook on the oven at 200°C during 20min.
- Let cool slightly before serving.
- Serve Hot.
