- 150 g Blanched almond
- 180 g Butter
- 120 g Granulated sugar
- 2 Eggs
- 250 g Flour t55
- 5 g Baking powder
- 50 g Almond cream
- 1 Apricot
- 50 g Icing sugar

Apricot
- Cut in four, and add 300 g of apricot in a bowl.
- Setaside the preparation content at the bowl.
Almond Cake Batter
- Add 100 g of blanched almond in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 10.
- Add 120 g of butter, 120 g of granulated sugar, 2 eggs in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Add 150 g of flour t55, 5 g of baking powder in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the food processor bowl in a mixing bowl.
- Add 50 g of almond cream in the mixing bowl.
- Gently fold in the almond cream.
- Add 1 apricot in the mixing bowl.
- Incorporate the quartered apricots into the batter.
Crumble Topping and Baking
- Wash the food processor bowl.
- Add 60 g of butter, 100 g of flour t55, 50 g of icing sugar, 50 g of blanched almond in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 5.
- Transfer the content of the food processor bowl in the bowl.
- Transfer the content of the mixing bowl in a cake mold.
- Sprinkle the crumble topping evenly over the cake.
- Preheat the oven at 180°C.
- Cook in the oven at 180°C during 35min.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool before serving.
