- 1000 g Apple
- 550 g Granulated sugar
- 30 g Lemon juice
Steps
Apple Puree
- Peel, cut in four, and add 1000 g of apple in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 5.
- Mix manual: 20:00min / 100°C / Speed 1.
- Mix manual: 30sec / 0°C / Speed 7.
Fruit Jellies Cooking
- Transfer the content of the food processor bowl in a saucepan.
- Add 500 g of granulated sugar, 30 g of lemon juice adjust according to the tastes in the saucepan.
- Cook in the saucepan at 105°C during 20min.
- Transfer the content of the saucepan in the ramekin.
Cooling and Coating
- Setaside the preparation content let cool during 6h .
- Unmould the content of the ramekin on a plate.
- Coat 50 g of granulated sugar with the preparation content.
- Serve Warm.
