- 500 g Chestnut
- 400 g Water
- 1 Pinch(es) Salt
- 1 Pinch(es) Pepper
- 300 g Pear
- 10 g Butter
- 20 g Pine nut
Steps
Chestnuts
- Add 500 g of chestnut, 400 g of water, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
- Mix manual: 25:00min / 100°C / Speed 1.
Blend
- Peel, cut in four, and add 300 g of pear in the food processor bowl.
- Mix manual: 30sec / 0°C / Speed 10. The mixture should be homogeneous, if it is not the case scrape the edges of the bowl with the spatula and mix again
Garnish
- Sauté pine nuts in butter in a pan until lightly browned.
- Transfer the content of the food processor bowl in a bowl.
- Add 10 g of butter in a pan.
- Add 20 g of pine nut in the pan.
- Place the content of the pan on the bowl.
- Serve Hot.
