  • 500 g Whole milk
  • 110 g Granulated sugar
  • 3 Eggs
  • 30 g Cornflour (maïzena)
  • 1 g Lemon zest
  • 1 g Orange zest
  • 1 Cinnamon stick

Steps

Preparation

  1. Add 500 g of whole milk, 100 g of granulated sugar, 3 eggs only the yellow, 30 g of cornflour (maïzena), 1 g of lemon zest, 1 g of orange zest, 1 cinnamon stick in the food processor bowl.
  2. Mix manual: 9:00min / 90°C / Speed 4.
  3. Remove the content of the food processor bowl in a bowl.
  4. Wash the food processor bowl.
  5. Remove the cinnamon stick.
  6. Pour the content of the bowl in the ramekin.
  7. Let cool slightly.
  8. Setaside the preparation content in a fridge during 3h .

Caramelizing

  1. Sprinkle 10 g of granulated sugar adjust according to the tastes on the preparation content.
  2. Sprinkle Granulated Sugar evenly over the top of each custard.
  3. Using a kitchen blowtorch, carefully melt the sugar until it forms a brittle, golden-brown crust.

  1. Serve Immediately.
