- 300 g Water
- 5 g Fresh baker's yeast
- 10 g Salt
- 20 g Olive oil
- 200 g Onion
- 1 Pinch(es) Salt

Steps
Dough Preparation
- Add 500 g of flour t55, 300 g of water, 5 g of fresh baker's yeast, 10 g of salt, 10 g of olive oil in the food processor bowl.
- Mix knead: 3:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl in a bowl.
- Setaside the dough in the bowl cover with towel during 1h 30.
Onion Preparation
- Wash the food processor bowl.
- Add 200 g of onion, 10 g of olive oil in the food processor bowl.
- Mix manual: 15:00min / 120°C / Speed 1.
- Add 1 pinch(es) of salt adjust according to the tastes, 1 pinch(es) of pepper adjust according to the tastes in the food processor bowl.
- Transfer the content of the food processor bowl in the bowl.
Assembly and Baking
- Preheat the oven at 220°C.
- Divide the dough in half.
- Roll out one piece of dough to fit the bottom of a greased pizza pan.
- Spread the cooked onions evenly over the dough.
- Sprinkle 250 g of mozzarella on the dough.
- Roll out the second piece of dough and place it on top of the cheese.
