  • 300 g Water
  • 5 g Fresh baker's yeast
  • 10 g Salt
  • 20 g Olive oil
  • 200 g Onion
  • 1 Pinch(es) Salt
  • 1 Pinch(es) Pepper
  • 500 g Mozzarella

Steps

Dough Preparation

  1. Add 500 g of flour t55, 300 g of water, 5 g of fresh baker's yeast, 10 g of salt, 10 g of olive oil in the food processor bowl.
  2. Mix knead: 3:00min / 0°C / Speed 1.
  3. Transfer the content of the food processor bowl in a bowl.
  4. Setaside the dough in the bowl cover with towel during 1h 30.

Onion Preparation

  1. Wash the food processor bowl.
  2. Add 200 g of onion, 10 g of olive oil in the food processor bowl.
  3. Mix manual: 15:00min / 120°C / Speed 1.
  4. Add 1 pinch(es) of salt adjust according to the tastes, 1 pinch(es) of pepper adjust according to the tastes in the food processor bowl.

Assembly and Baking

  1. Preheat the oven at 220°C.
  2. Divide the dough in half.
  3. Roll out one piece of dough to fit the bottom of a greased pizza pan.
