Ingredients
- 300 g Granulated sugar
- 3 Lemons
- 30 g Lemon juice
- 6 Eggs
- 250 g Butter
- 200 g Flour t55
- 1 Teaspoon(s) Baking powder

Lemon Curd
- Add 100 g of granulated sugar, 2 lemons only the yellow in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 10.
- Add 30 g of lemon juice, 2 eggs, 50 g of butter in the food processor bowl.
- Mix manual: 8:00min / 80°C / Speed 4.
- Transfer the content of the food processor bowl in an airtight jar let cool.
- Wash the food processor bowl.
Cake Batter
- Preheat the oven at 180°C.
- Grease and flour a round cake pan
- Add 1 lemon only the yellow, 200 g of granulated sugar in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 10.
- Add 200 g of butter in the food processor bowl.
- Mix manual: 2:00min / 0°C / Speed 3.
- Add 1 egg in the food processor bowl.
- Mix manual: 15sec / 0°C / Speed 4.
- Add 1 egg in the food processor bowl.
- Mix manual: 15sec / 0°C / Speed 4.
- Add 1 egg in the food processor bowl.
- Mix manual: 15sec / 0°C / Speed 4.
- Add 1 egg in the food processor bowl.
- Mix manual: 15sec / 0°C / Speed 4.
- Add 200 g of flour t55, 1 teaspoon(s) of baking powder in the food processor bowl.
- Mix manual: 30sec / 0°C / Speed 4.
Baking
- Pour the content of the food processor bowl in a cake mold.
- Cook in the oven at 180°C during 30min.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Setaside the cake mold in an oven let cool during 10min.
- Transfer the content of the cake mold on a strainer let cool.
Assembly
- Once the cake is completely cool, slice it horizontally.
- Spread a generous layer of Lemon Curd over the bottom layer.
- Place the top layer of the cake over the Lemon Curd.
- Dust the top of the cake with Icing Sugar, if desired.
- Serve Immediately.
