Imagine sinking your teeth into a buttery, melt-in-your-mouth lemon shortbread that dances on your taste buds like a summer breeze! This delightful treat, with its zesty lemon flavor and crumbly texture, has roots that trace back to Scotland, where shortbread was originally a festive delicacy, often enjoyed during Christmas and New Year celebrations. Legend has it that the first shortbread was made from leftover bread dough, which was then sweetened and baked to create a biscuit fit for royalty. With the added twist of almond powder and a refreshing glaze, these lemon shortbreads not only bring a burst of sunshine to your tea time but also serve as a reminder that sometimes, the simplest ingredients can create the most extraordinary delights.
