- 6 Strand(s) Fresh coriander
- 2 Pinch(es) Salt
- 2 Pinch(es) Pepper
- 0.5 Teaspoon(s) Ground cumin
- 1 Teaspoon(s) Paprika
- 60 g Olive oil
- 12 Raw sardines
- 20 g Sunflower oil
Steps
- Add 2 cloves of garlic in the food processor bowl.
- Cut the tail, and add 6 strand(s) of fresh coriander in the food processor bowl.
- Add 2 pinch(es) of salt, 2 pinch(es) of pepper adjust according to the tastes in the food processor bowl.
- 0, and add ½ teaspoon(s) of ground cumin 0, 1 teaspoon(s) of paprika 0 in the food processor bowl.
- Add 60 g of olive oil in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 5.
- Add 12 raw sardines in a salad bowl.
- Open the sardines from the belly without cutting through the back. Remove the central bone and brush the fillets with the preparation on the flesh side.
- Attach another opened sardine to the first one and prepare all the sardines in this way to create 6 arrangements. Lightly flour them and set aside.
- Add 20 g of sunflower oil in a pan.
- Brown the sardines on both sides while watching for the color. Drain on absorbent paper and serve immediately.
