Ingredients
- 100 g Speculoos
- 50 g Butter
- 200 g Water
- 2 Sheet(s) Gelatin
- 500 g Whipping cream
- 180 g Granulated sugar
- 2 Lemon zests
- 2 Lemon juice
- 300 g Mango
- 2 g Agar
Steps
Speculoos Base
- Add 100 g of speculoos in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 5.
- Transfer the content of the food processor bowl in a bowl.
- Wash the food processor bowl.
- Add 50 g of butter in a saucepan.
- Melt the saucepan over low heat.
- Transfer the content of the saucepan in the bowl.
- Combine crushed Speculoos with melted Butter in a bowl.
- Distribute the mixture evenly into the bottom of the verrines or glasses and press down gently.
- Setaside the preparation content in a fridge during 30min.
Lemon Panna Cotta
- Add 100 g of water, 2 sheet(s) of gelatin in the bowl.
- Soften Gelatin in cold Water in a bowl.
- Transfer the content of the bowl in the preparation content.
- Add 500 g of whipping cream, 100 g of granulated sugar in the food processor bowl.
- Mix manual: 5:00min / 90°C / Speed 2.
- Add 2 lemon zests, 2 lemon juice in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 3.
- Remove and Squeeze excess water from the softened Gelatin and add it to the robot bowl.
- Mix manual: 10sec / 0°C / Speed 3.
- Transfer the content of the food processor bowl over the preparation content.
- Setaside the preparation content in the fridge during 2h .
Mango Mirror
- Peel, chop, and add 300 g of mango in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 6.
- Add 100 g of water, 80 g of granulated sugar, 2 g of agar in the food processor bowl.
- Mix manual: 7:00min / 100°C / Speed 2.
- Let the mixture cool slightly.
- Transfer the content of the food processor bowl over the preparation content.
- Setaside the preparation content in the fridge during 1h .
