  • 125 g Salted butter
  • 80 g Granulated sugar
  • 1 Egg
  • 200 g Dark chocolate
  • 100 g Whipping cream
  • 300 g Pear
  • 20 g Icing sugar

Steps

Sweet Pastry

  1. Add 250 g of flour t55, 125 g of salted butter, 80 g of granulated sugar, 1 egg in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 4.
  3. Transfer the content of the food processor bowl on a workplan.
  4. Shape the dough into a ball and wrap it in cling film.
  5. Setaside the dough in a fridge during 30min.

Chocolate Filling

  1. Add 200 g of dark chocolate in the food processor bowl.
  2. Mix chop: 5sec / 0°C / Speed 5.
  3. Add 100 g of whipping cream in the food processor bowl.
  4. Mix manual: 3:00min / 50°C / Speed 2.
  5. Setaside the preparation content in a bowl.

Assembling and Baking

  1. Preheat the oven at 180°C.
  2. Transfer the content of the fridge by using a roller on the workplan.
  3. Roll out the sweet pastry and place it in a tart pan. Prick the bottom with a fork.
  4. Cook in the oven at 180°C during 15min.
  5. Transfer the content of the bowl on the preparation content.
  6. Remove from the oven and spread the chocolate filling evenly over the crust.
  7. Peel, sliced, and place 300 g of pear on the preparation content.
  8. Arrange the pear slices on top of the chocolate filling.
  9. Cook in the oven at 180°C during 20min.
  10. Sprinkle 20 g of icing sugar on the preparation content.
  11. Serve Warm.
