  • 1 Cauliflower
  • 400 g Chickpea
  • 50 g Olive oil
  • 2 Pinch(es) Salt
  • 2 Pinch(es) Pepper
  • 1 Pinch(es) Chili powder
  • 1 g Onion
  • 2 g Clove of garlic
  • 800 g Vegetable broth
  • 50 g Sesame cream - tahini
  • 2 g Lemon
  • 1 Pinch(es) Thyme

Steps

Roast Cauliflower and Chickpeas

  1. Preheat the oven at 200°C.
  2. Cut in pieces, and add 1 cauliflower in a bowl.
  3. Add 400 g of chickpea, 25 g of olive oil, 1 pinch(es) of salt, 1 pinch(es) of pepper, 1 pinch(es) of chili powder in the bowl.
  4. Transfer the content of the bowl on a baking tray.
  5. Cook in the oven at 200°C during 20min.
  6. Setaside the preparation content.

Soup Base

  1. Add 1 g of onion, 2 g of clove of garlic in the food processor bowl.
  2. Mix manual: 5sec / 0°C / Speed 5.
  3. Scrape down the sides of the bowl
  4. Add 25 g of olive oil in the food processor bowl.
  5. Mix manual: 5:00min / 120°C / Speed 1.
  6. Add 800 g of vegetable broth, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
  7. Mix manual: 15:00min / 100°C / Speed 1.
  8. Add half of the roasted Cauliflower and Chickpeas to the robot bowl.
  9. Mix manual: 30sec / 0°C / Speed 10. The mixture should be homogeneous, if it is not the case scrape the edges of the bowl with the spatula and mix again
  10. Add 50 g of sesame cream – tahini, 2 g of lemon in the food processor bowl.
  11. Mix manual: 10sec / 0°C / Speed 3.

Assemble Bowl

  1. Pour the soup into bowls.
  2. Top with the remaining roasted Cauliflower and Chickpeas.
  3. Dispose 1 pinch(es) of thyme on the bowl.
  4. Sprinkle 1 pinch(es) of chili powder with the bowl.
  5. Serve Immediately.
