Ingredients
- 250 g Masa flour
- 250 g Chicken broth
- 120 g Lard
- 10 g Baking powder
- 10 g Salt
- 4 g Garlic powder
- 500 g Ground beef
- 150 g Onion
- 100 g Potato
- 10 g Chili powder
- 5 g Ground cumin
- 5 g Dried oregano
- 2 g Pepper
- 1000 g Water
Steps
Dough Preparation
- Add 250 g of masa flour, 250 g of chicken broth, 120 g of lard, 10 g of baking powder, 5 g of salt, 2 g of garlic powder in the food processor bowl.
- Mix manual: 30sec / 0°C / Speed 4.
- Remove the dough and place in a bowl and cover with plastic wrap.
Filling Preparation
- Wash the food processor bowl.
- Add 500 g of ground beef in the food processor bowl.
- Mix manual: 10:00min / 120°C / Speed 2.
- Drain any excess fat.
- Add 150 g of onion, 100 g of potato in the food processor bowl.
- Mix manual: 5:00min / 120°C / Speed 2.
- Add 10 g of chili powder, 5 g of ground cumin, 5 g of dried oregano, 2 g of garlic powder, 5 g of salt, 2 g of pepper in the food processor bowl.
- Mix manual: 30sec / 0°C / Speed 3.
Assembly
- Soften Corn Tortillas by steaming them or heating them briefly on a dry skillet until pliable.
- Spread a thin layer of the dough evenly onto each softened Corn Tortilla.
- Spoon a generous amount of the Ground Beef filling down the center of the dough.
- Fold the sides of the Corn Tortilla over the filling, and then fold the ends to enclose completely.
Steaming
- Place the assembled tamales into the vapor kit.
- Add 1000 g of water in the food processor bowl.
- Place the vapor kit.
- Mix manual: 60:00min / 120°C / Speed 1.
- Remove the vapor kit.
Serving
- Carefully remove the steamed tamales from the vapor kit.
- Serve Hot.
- Serve warm, directly from the Corn Tortilla.
