Berrylicious Mini Cheesecakes using a Thermomix

Mini express cheesecakes are the delightful little wonders that fit perfectly in the palm of your hand and the corner of your heart. Originating as a quick solution for those last-minute dessert cravings, these bite-sized beauties combine the creamy goodness of Philadelphia cheese with the tangy zest of lemon juice, all held together by a buttery, crumbly crust. With a dollop of blueberry jam perched on top, they’re like tiny crowns of sweetness! Fun fact: cheesecakes date back to ancient Greece, where they were served to athletes during the first Olympic Games. Who knew that a treat enjoyed by champions could be made in a mere 22 minutes?
