Ingredients
- 15 g Fresh baker's yeast
- 200 g Milk
- 500 g Flour t45
- 2 Pinch(es) Salt
- 75 g Granulated sugar
- 2 Eggs
- 125 g Butter
Steps
- Add 15 g of fresh baker's yeast, 200 g of milk in the food processor bowl.
- Mix manual: 30sec / 0°C / Speed 1.
- Let it rest for 5 minutes.
- Add 500 g of flour t45, 2 pinch(es) of salt, 75 g of granulated sugar, 2 eggs in the food processor bowl.
- Mix knead: 8:00min / 0°C / Speed 2.
- Cut in pieces, and add 125 g of butter in the food processor bowl.
- Mix knead: 4:00min / 0°C / Speed 2.
- Transfer the content of the preparation content in a salad bowl.
- Setaside the preparation content in an oven cover with towel during 2h .
- On a lightly floured work surface, divide the dough into sixteen pieces, each weighing approximately 60 grams.
- Shape the long rolls, then place them on the baking tray lined with parchment paper, leaving space between each.
- Preheat the oven at 200°C.
- Setaside the preparation content cover with towel during 45min.
- When the small rolls are nice and plump, brush them with the remaining milk using a brush.
- Cook in the oven at 190°C during 8min to 10min.
- Let them cool on a rack before enjoying them.
