Apricot Amaretti using a Thermomix

Dive into the delightful world of Apricot Amaretti, a treat that marries the nutty crunch of blanched almonds with the sweet, sunny essence of apricots! Originating from Italy, these little morsels are not just a cookie; they’re a celebration of flavors wrapped in a delicate shell, perfect for pairing with your afternoon espresso. Fun fact: Amaretti means 'little bitter ones' in Italian, a nod to the almond's slight bitterness that contrasts beautifully with the sweetness of the apricots. Serve them at your next gathering and watch as they disappear faster than you can say 'Buon Appetito'!
