  • 250 g Flour t55
  • 125 g Salted butter
  • 50 g Icing sugar
  • 1 Egg
  • 20 g Water
  • 200 g Strawberry jam
  • 250 g Strawberry
  • 50 g Puff pastry

Steps

Shortcrust Pastry

  1. Add 250 g of flour t55, 125 g of salted butter in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 6.
  3. Add 50 g of icing sugar, 1 egg, 20 g of water in the food processor bowl.
  4. Mix manual: 20sec / 0°C / Speed 4.
  5. Transfer the content of the food processor bowl on a workplan.
  6. Flatten the dough into a disc and wrap in cling film.
  7. Setaside the dough in a fridge during 30min.

Tartlets

  1. Preheat the oven at 180°C.
  2. Roll out the Shortcrust Pastry on a lightly floured surface.
  3. Cut out circles slightly larger than the tartlet molds.
  4. Gently press the pastry circles into the tartlet molds.
  5. Trim the edges.
  6. Prick the base of each tartlet with a fork.
  7. Cook in the oven at 180°C during 15min.
  8. Cook in the oven at 180°C during 20min.
  9. Allow the tartlets to cool completely in the molds before removing.
  10. Spread 200 g of strawberry jam in a plate.

Garnish

  1. Cut Strawberries in half.
  2. Roll out the Puff Pastry scraps.
  3. Cut out small shapes (stars, hearts, etc.).
  4. Cook in the oven at 180°C.
  5. Bake until golden and crisp.
  6. Garnish each tartlet with Strawberry halves and Puff Pastry shapes.
  7. Cut in two, and place 250 g of strawberry on the plate.
  8. Place 50 g of puff pastry on the plate.
  9. Serve Immediately.
