This traditional Georgian dish, often referred to as 'cheese bread,' is an irresistible blend of mozzarella and feta, cradled in a golden, flaky puff pastry. Legend has it that Khachapuri was originally crafted by shepherds who needed a hearty meal while tending to their flocks, and boy, did they succeed! With a delightful mix of fresh parsley, rich yogurt, and a touch of spice, each bite transports you to a cozy mountain lodge, making it not just food, but an experience. Ingredients
- 150 g Fresh parsley
- 300 g Mozzarella
- 300 g Feta cheese
- 3 Eggs
- 300 g Greek yogurt
- 0.5 Teaspoon(s) Salt
- 1 Pinch(es) Pepper
Steps
- Preheat the oven at 200°C.
- Add 150 g of fresh parsley leaves only in the food processor bowl.
- Mix chop: 5sec / 0°C / Speed 5.
- Add 300 g of mozzarella, 300 g of feta cheese, 3 eggs, 300 g of greek yogurt, ½ teaspoon(s) of salt, 1 pinch(es) of pepper in the food processor bowl.
- Mix manual: 8sec / 0°C / Speed 4. The mixture should be homogeneous, if it is not the case scrape the edges of the bowl with the spatula and mix again
- Add 500 g homemade puff pastry on a workplan.
- Roll out the puff pastry on a lightly floured work surface and cut it into two squares measuring 30 cm by 30 cm.
- Pour the filling into the center of the puff pastry square, leaving a small space at the edges.
- Fold the four corners of the dough to create a square, gently pinching the edges to seal them.
- Place the khachapuris on a baking sheet lined with parchment paper.
- Cook in the oven during 20min to 25min.
- Until the dough is golden and crispy.
- Serve the khachapuris hot, cut into pieces. Enjoy your meal!
