Ingredients

  • 500 g Flour
  • 100 g Blanched almond
  • 100 g White sesame seed
  • 15 g Anise
  • 0.5 Teaspoon(s) Cinnamon powder
  • 0.25 Teaspoon(s) Saffron
  • 0.25 Teaspoon(s) Salt
  • 0.5 Teaspoon(s) Baking powder
  • 125 g Butter
  • 125 g Olive oil
  • 100 g Orange blossom water
  • 50 g Wine vinegar
  • 1 Egg
  • 50 g Water
  • 1000 g Sunflower oil
  • 500 g Honey

Steps

Dough Preparation

  1. Add 500 g of flour, 100 g of blanched almond, 100 g of white sesame seed, 15 g of anise, ½ teaspoon(s) of cinnamon powder, ¼ teaspoon(s) of saffron, ¼ teaspoon(s) of salt, ½ teaspoon(s) of baking powder in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 4.
  3. Add 125 g of butter, 125 g of olive oil, 50 g of orange blossom water, 50 g of wine vinegar, 1 egg, 50 g of water in the food processor bowl.
  4. Mix manual: 30sec / 0°C / Speed 4.
  5. If the dough is too dry, add more water, 1 tablespoon at a time, until it comes together.
  6. Transfer the content of the food processor bowl in a bowl.
  7. Form the dough into a ball.
  8. Wrap it in plastic wrap.
  9. Setaside the dough during 30min.

Forming and Frying

  1. Divide the dough into 4-5 portions.
  2. Roll out each portion thinly on a lightly floured surface.
  3. Cut the dough into rectangles (about 7cm x 5cm).
  4. Make 4-5 slits lengthwise in each rectangle, without cutting through the edges.
  5. To form the chebakia, pick up the rectangle, and carefully weave the strips together to create a flower-like shape. Pinch the ends to secure.
  6. Add 1000 g of sunflower oil in a pan.
  7. Heat the Oil in a large, deep pan over medium heat.
  8. Fry the chebakia in batches until golden brown on all sides.
  9. Place on a wire rack to drain excess oil.

Honey Syrup

  1. Wash the food processor bowl.
  2. Add 500 g of honey, 50 g of orange blossom water in the food processor bowl.
  3. Mix manual: 5:00min / 50°C / Speed 2.

Finishing

  1. Dip the fried chebakia into the warm Honey Syrup. Make sure they are well coated.
  2. Remove excess of the food processor bowl by using a spoon on a baking tray.
  3. Sprinkle 0 g of white sesame seed on the baking tray.
  4. Sprinkle Sesame Seeds over the chebakia while they are still wet.
  5. Let the chebakia cool completely before serving.
  6. Serve Immediately.
