- 50 g Butter
- 50 g Flour
- 1 Pinch(es) Salt
- 1 Pinch(es) Pepper
- 500 g Whole milk
- 100 g Ham slice
- 2 Eggs
- 100 g Breadcrumb
- 500 g Olive oil

Preparation
- Add 50 g of butter in the food processor bowl.
- Mix manual: 3:00min / 60°C / Speed 2.
- Add 50 g of flour, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
- Mix manual: 3:00min / 90°C / Speed 4.
- Add 500 g of whole milk gradually through a plate.
- Mix manual: 7:00min / 90°C / Speed 4.
- Add 100 g of ham slice in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 3 in inverse.
- Pour the content of the food processor bowl in a baking dish.
- Cover with plastic wrap, touching the surface to prevent a skin from forming.
- Setaside the preparation content in a fridge during 2h .
Forming the Croquettes
- Shape the cooled mixture into small, elongated or round croquettes.
- Coat 2 eggs in a bowl.
- Cover 100 g of breadcrumb in the plate.
Frying
- Add 500 g of olive oil in a frypan.
- Cook in the pan over medium heat at 180°C.
- Carefully place the croquettes in the hot oil, working in batches to avoid overcrowding the pan.
- Fry in the pan during 2min.
- Remove the content of the frypan by using a spoon on the plate let cool.
- Place them on a plate lined with paper towels to drain excess oil.
- Serve Hot.
