  • 50 g Butter
  • 50 g Flour
  • 1 Pinch(es) Salt
  • 1 Pinch(es) Pepper
  • 500 g Whole milk
  • 100 g Ham slice
  • 2 Eggs
  • 100 g Breadcrumb
  • 500 g Olive oil

Steps

Preparation

  1. Add 50 g of butter in the food processor bowl.
  2. Mix manual: 3:00min / 60°C / Speed 2.
  3. Add 50 g of flour, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
  4. Mix manual: 3:00min / 90°C / Speed 4.
  5. Add 500 g of whole milk gradually through a plate.
  6. Mix manual: 7:00min / 90°C / Speed 4.
  7. Add 100 g of ham slice in the food processor bowl.
  8. Mix manual: 10sec / 0°C / Speed 3 in inverse.
  9. Pour the content of the food processor bowl in a baking dish.
  10. Cover with plastic wrap, touching the surface to prevent a skin from forming.
  11. Setaside the preparation content in a fridge during 2h .

Forming the Croquettes

  1. Shape the cooled mixture into small, elongated or round croquettes.
  2. Coat 2 eggs in a bowl.
  3. Cover 100 g of breadcrumb in the plate.

Frying

  1. Add 500 g of olive oil in a frypan.
  2. Cook in the pan over medium heat at 180°C.
  3. Carefully place the croquettes in the hot oil, working in batches to avoid overcrowding the pan.
  4. Fry in the pan during 2min.
  5. Remove the content of the frypan by using a spoon on the plate let cool.
  6. Place them on a plate lined with paper towels to drain excess oil.
  7. Serve Hot.
