Steps

Mousse Creation

  1. Add 150 g of duck foie gras, 50 g of poultry liver, 50 g of butter, 10 g of cognac, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
  2. Mix manual: 20sec / 0°C / Speed 5. Scrape the sides of the bowl with the spatula
  3. Mix manual: 8:00min / 90°C / Speed 3.
  4. Mix manual: 20sec / 0°C / Speed 7.
  5. If a smoother consistency is desired, pass the mixture through a fine-mesh sieve.

Cooling and Setting

  1. Transfer the content of the food processor bowl in the ramekin.
  2. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
  3. Setaside the preparation content in a fridge during 4h .
  4. Serve Cold.
