Steps

Dough

Add 125 g of water, 50 g of butter, 1 g of salt, 8 g of granulated sugar in the food processor bowl.
Mix manual: 5:00min / 100°C / Speed 1.
Add 70 g of flour t55 in the food processor bowl.
Mix manual: 20sec / 0°C / Speed 4.
Setaside the preparation content let cool during 10min.
Mix manual: 30sec / 0°C / Speed 5.
Add 2 eggs one by one in the food processor bowl.

Shaping and Baking

Preheat the oven at 180°C.
Transfer the content of the food processor bowl in a piping bag.
Fit the piping bag with a plain round nozzle
Line a baking sheet with baking paper
Pipe small mounds of dough onto the prepared baking sheet
Sprinkle 50 g of pearl sugar on some dough.
Cook in the oven at 180°C during 20min.
Bake until golden brown and puffed up
Do not open the oven door during baking

Final Presentation

Transfer the content of the baking tray in a strainer.
Let cool completely
Transfer the content of the strainer in a service dish.
Arrange the Chouquettes in serving dishes or baskets, allowing for a varied presentation of sizes and shapes
