  • 500 g Flour t55
  • 20 g Fresh baker's yeast
  • 250 g Milk
  • 75 g Granulated sugar
  • 75 g Butter
  • 2 Eggs
  • 1 Pinch(es) Salt
  • 500 g Sunflower oil
  • 15 g Icing sugar

Steps

Dough

  1. Add 500 g of flour t55, 20 g of fresh baker's yeast in the food processor bowl.
  2. Mix manual: 5sec / 0°C / Speed 5.
  3. Add 250 g of milk, 75 g of granulated sugar, 75 g of butter, 2 eggs, 1 pinch(es) of salt in the food processor bowl.
  4. Mix knead: 2:00min / 0°C / Speed 1.
  5. Transfer the content of the food processor bowl on a workplan.
  6. Let rise in a warm place for about 1 hour.

Shaping and Frying

  1. Punch down the dough gently.
  2. Roll the dough out to about 1 cm thickness.
  3. Cut out oval shapes using a knife.
  4. Preheat in the oven with an oil base at 170°C.
  5. Add 500 g of sunflower oil in a frypan.
  6. Carefully place the shaped dough into the hot oil, a few at a time.
  7. Fry in the oven with an oil base at 170°C during 2min and each side.
  8. Transfer the content of the frypan on a plate.
  9. Place them on a plate lined with paper towels to drain excess oil.

Final Touches

  1. Sprinkle 15 g of icing sugar on the plate.
  2. Dust the beignets generously while they are still warm.
  3. Serve Immediately.
