- 300 g Water
- 10 g Fresh baker's yeast
- 500 g Flour t55
- 30 g Granulated sugar
- 10 g Salt
- 50 g Butter
- 1 Egg
- 1 Pinch(es) White sesame seed
- 1 Pinch(es) Poppy seed
Steps
Dough
- Add 300 g of water, 10 g of fresh baker's yeast in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 2.
- Add 500 g of flour t55, 30 g of granulated sugar, 10 g of salt, 50 g of butter in the food processor bowl.
- Mix knead: 6:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl in a mixing bowl.
- Setaside the dough in the mixing bowl cover with towel during 1h .
Shaping and Baking
- Preheat the oven at 190°C.
- Line a baking sheet with baking paper.
- Punch down the risen dough.
- Divide the dough into 12 equal pieces.
- Shape each piece into a smooth, round bun.
- Place the content of the dough on a baking tray.
- Leave some space between the buns on the baking tray.
- Using a sharp knife or a lame, make a shallow crescent-shaped cut on the top of each bun.
- Brush 1 egg on the dough.
- Sprinkle 1 pinch(es) of white sesame seed, 1 pinch(es) of poppy seed on the dough.
- Setaside the dough on the baking tray during 20min.
- Cook in the oven at 190°C.
- Transfer the content of the baking tray in a strainer let cool.
- Serve Cold.
