  • 60 g Icing sugar
  • 2 Eggs
  • 200 g Whipping cream

  2. Add 30 g of water in the bowl.
  3. Setaside the preparation content during 10min.
  4. Add 250 g of raspberry, 60 g of icing sugar in the food processor bowl.
  5. Mix manual: 10sec / 0°C / Speed 10.
  6. Filter the content of the food processor bowl through a strainer.
  7. Transfer the content of the preparation content in the bowl.
  8. Setaside the preparation content.

Raspberry Mousse

  1. Wash the food processor bowl.
  2. Add 2 eggs only white in the food processor bowl.
  3. Place the whisk.
  4. Mix manual: 4:00min / 0°C / Speed 4.
  5. Setaside the preparation content at the bowl.
  6. Wash the food processor bowl.
  7. Transfer the content of the bowl in the food processor bowl.
  8. Mix manual: 2:00min / 50°C / Speed 2.
  9. Transfer the rest of the content of the preparation content in the food processor bowl.
  10. Add 200 g of raspberry in the food processor bowl.
  11. Mix manual: 10sec / 0°C / Speed 3.
  12. Transfer the content of the preparation content over the bowl.
  13. Transfer the content of the bowl over the preparation content.
  14. Gently fold until combined.
  15. Wash the bowl.
  16. Add 200 g of whipping cream in the bowl.
  17. Mix manual: 0sec / 0°C / Speed 1.
  18. Transfer the content of the preparation content in the bowl.
  19. Transfer the content of the bowl in the preparation content.
  20. Gently fold until well combined.

Assembly

  1. Divide the content of the preparation content in a glass.
  2. Setaside the preparation content during 2h .
  3. Pour the content of the bowl by using a spoon over the preparation content.
  4. Add 1 raspberry on the preparation content.
  5. Serve Immediately.
