- 250 g Flour t55
- 5 g Salt
- 15 g Olive oil
- 100 g Mozzarella
- 100 g Gruyere
- 50 g Blue auvergne
- 50 g Reblochon
Steps
Dough
- Add 120 g of water, 5 g of dehydrated baker's yeast in the food processor bowl.
- Mix manual: 2:00min / 37°C / Speed 2.
- Add 250 g of flour t55, 5 g of salt, 15 g of olive oil in the food processor bowl.
- Mix knead: 3:00min / 0°C / Speed 1.
- Transfer the content of the food processor bowl in a bowl.
- Wash the food processor bowl.
- Form a ball with the dough.
- Lightly oil the bowl.
- Setaside the dough in the bowl cover with towel during 1h .
Cheese Mix
- Cut the Mozzarella into cubes.
- Cut the Gruyere into cubes.
- Cut the Blue Auvergne into cubes.
- Cut the Reblochon into cubes.
- Add 100 g of mozzarella, 100 g of gruyere, 50 g of blue auvergne, 50 g of reblochon in the food processor bowl.
- Mix manual: 5sec / 0°C / Speed 5.
- Transfer the content of the food processor bowl in the bowl.
- Wash the food processor bowl.
Pizza Assembly and Baking
- Preheat the oven at 250°C.
- Roll out the dough on a lightly floured surface.
- Roll to your desired pizza thickness and shape.
- Transfer the content of the dough in a baking tray.
