Ah, aioli! The creamy, garlicky elixir that has graced tables since the days of ancient Rome, when it was likely used as a dip for bread and a companion to roasted meats. With just a handful of ingredients—garlic, egg yolk, mustard, lemon juice, and a splash of sunflower and olive oils—this sauce is a testament to the magic of simplicity. Legend has it that aioli was made by pounding garlic and olive oil together using a mortar and pestle, a method that might make you feel like an ancient chef channeling the culinary spirits of yore. Perfect for slathering on sandwiches, dipping vegetables, or simply licking off the spoon (we won’t judge!), aioli is your new best friend in the kitchen. So, grab your food processor and let the garlic festivities begin!
