Ingredients
- 150 g Butter
- 100 g Icing sugar
- 1 Teaspoon(s) Vanilla extract
- 280 g Flour t45
- 1 Bag(s) Baking powder
- 2 Eggs
- 1 Pinch(es) Salt
- 200 g Sweetened condensed milk
- 40 g Grated coconut
Steps
- Cut in pieces, and add 150 g of butter in the food processor bowl.
- Add 100 g of icing sugar, 1 teaspoon(s) of vanilla extract in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 6.
- Add 280 g of flour t45, 1 bag(s) of baking powder, 2 eggs only the yellow, 1 pinch(es) of salt in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the preparation content in a Preparation name cover with plastic wrap.
- Setaside the preparation content in a fridge during 15min.
- Preheat the oven at 180°C.
- Line 3 baking sheets with parchment paper and set aside.
- Using a rolling pin, roll out the dough between two sheets of parchment paper to a thickness of about 1 cm.
- Using a cookie cutter (Ø 5 cm), cut out disks and arrange them on the prepared trays.
- Cook in the oven at 180°C during 12min.
- Allow the cookies to cool completely before adding the toppings.
- Add 200 g of sweetened condensed milk on a workplan.
- Add 40 g of grated coconut on the workplan.
- Spread 1 tablespoon of condensed milk on a cookie, cover it with another cookie, and then roll the sides of the filled cookie in shredded coconut.
- Repeat the process with the other cookies, then set aside in the refrigerator until it's time to serve.
