- 200 g Blanched almond
- 150 g Icing sugar
- 2 Eggs
- 200 g Powdered almond
- 2 g Bitter almond flavor

Almond Flour
- Add 200 g of blanched almond in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 10.
- Scrape down the sides of the bowl with a spatula.
- Mix manual: 10sec / 0°C / Speed 10.
- Transfer the content of the food processor bowl by using the spatula in a bowl.
- Setaside the preparation content at the bowl.
Cookie Dough
- Wash the food processor bowl.
- Add 150 g of icing sugar, 2 eggs in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Transfer the content of the bowl in the food processor bowl.
- Add 200 g of powdered almond, 2 g of bitter almond flavor in the food processor bowl.
- Mix manual: 30sec / 0°C / Speed 3.
- Transfer the content of the food processor bowl in the bowl.
- Setaside the dough in a fridge during 30min.
Baking
- Preheat the oven at 150°C.
- Line a baking sheet with baking paper.
- Transfer the content of the fridge on a workplan.
- Roll the dough into small balls, about 2 cm in diameter.
- Place the balls on the prepared baking sheet, leaving some space between them.
- Cook in the oven at 150°C during 20min.
- Let the Amaretti cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Serve Cold.
