  • 2 Lemon zests
  • 100 g Granulated sugar
  • 200 g Speculoos
  • 50 g Butter
  • 300 g Ricotta
  • 300 g Philadelphia
  • 3 Eggs
  • 1 Apple

Steps

  1. Preheat the oven at 180°C.
  2. Add 2 lemon zests, 100 g of granulated sugar in the food processor bowl.
  3. Mix manual: 5sec / 0°C / Speed 5.
  4. Transfer the content of the preparation content in a container.
  5. Cut in pieces, and add 200 g of speculoos, 50 g of butter in the food processor bowl.
  6. Mix manual: 5sec / 0°C / Speed 5.
  7. Spread it over the bottom of a springform pan (Ø 20 cm) and press it down with the back of a spoon.
  8. Cook in the oven at 180°C during 12min.
  9. At the end of cooking, keep the oven warm but reduce the temperature to 140°C (Gas mark 4-5).
  10. Transfer the content of the preparation content in a cake mold.
  11. Add 300 g of ricotta, 300 g of philadelphia, 3 eggs in the food processor bowl.
  12. Transfer the content of the container.
  13. Mix manual: 20sec / 0°C / Speed 5.
  14. Peel, cut into dices, and add 1 apple in the food processor bowl.
  15. Mix manual: 10sec / 0°C / Speed 5.
  16. Spread over a layer of biscuits and then bake.
  17. Cook in the oven at 140°C during 1h .
  18. Let it cool down in the turned-off oven with the door slightly open.
  19. Setaside in a fridge during 2h .
  20. Optional: Place the remaining 15 g of butter and 20 g of sugar in a pan, then caramelize the leftover apple slices in it. Arrange these caramelized apple slices beautifully on top of the cake.
  21. Reserve at a cool temperature until it's time to enjoy.
