- 350 g Green asparagus
- 70 g Parmesan cheese
- 2 Eggs
- 100 g Whipping cream
- 50 g Milk
- 1 Pinch(es) Salt
- 1 Pinch(es) Pepper
Steps
Asparagus
- Wash, and add 200 g of green asparagus on a cutting board.
- Cut into small pieces, reserve the asparagus tips for decoration.
Flan Mixture
- Add 70 g of parmesan cheese in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 10.
- Add 2 eggs, 100 g of whipping cream, 50 g of milk, 1 pinch(es) of salt, 1 pinch(es) of pepper in the food processor bowl.
- Mix manual: 20sec / 0°C / Speed 4.
- Add 150 g of green asparagus in the food processor bowl.
- Mix manual: 10sec / 0°C / Speed 2 in inverse.
Cooking
- Preheat the oven at 180°C.
- Pour the content of the food processor bowl in the ramekin.
- Garnish with the reserved Green Asparagus tips.
- Cook in the oven at 180°C during 25min.
- Let cool slightly before serving.
- Serve Hot.
